Stuffed Chocolate Chip Cookies

These babies are delicious! I was inspired by two blogs: The Kitchen Magpie and Ambitious Kitchen. (Both of which are really good reads. I highly recommend!)
I didn’t follow either recipe, but instead I did my own thing. I used my go-to chocolate chip cookie recipe and stuffed them with chocolate caramels. The technique of “stuffing” cookies is actually really easy. Basically, I took some of the cookie dough, made a ball and flattened it. Then, I put the flattened cookie on the baking sheet, put a chocolate caramel on top, and smooshed it down a bit so that it really got into the dough. Next, I made a second flattened cookie and put it on top, pinched the edges of the two cookies together so the looked seamless. And the last part – I baked them!
The recipe for the choc chip cookies is supposed to make 4 dozen… I got 11 stuffed cookies out of it. That should give you an idea of the size of these things. They’re huuuuge!

re: stuffed cookies: i wonder if you were to take the caramel and wrap cookie dough around it like a cookie ball if the same thing would happen – but on a smaller scale?
I bet it would! I think next time I’ll use smaller caramels too… These were just too big. Not that I mind gigantic cookies, but really, making only 11 just doesn’t seem right! I have some peppermint patties and small peanut butter cups that I want to try!
